I am a complete ignoramus on this matter. But, a cat seems to me a better image of the Copenhagen interpretation as it is an unpredictable animal. What it will do depends on chance, in the popular mind. Contrastly (if that's a word), a dog can be ordered around, controlled, tamed.

Of course it could have been a dog or any other animal. The cat was just a metaphor to ridicule the conclusion of quantum mechanics: superposition.
Or did Schrödinger have a cat as pet he was really attached to? So that his point was more dramatic? More artistic!!
